Where It All Begins

GYST Fermentation Bar is a family-owned, producer-driven business. We believe that good food comes from good people, so we highlight our favorite artisanal producers and farmers, and connect you to their products and stories.

In fact, we are producers ourselves. GYST Traditional Pickles and Kombucha are made in-house using the best local and/or organically farmed ingredients. Supporting the livelihood of those in the food and beverage industries is profoundly important to us. We either source directly from farmers and producers or use products with transparent sourcing and practices. It’s how we sustain ourselves, grow our small business, and how we support the businesses of our fellow food producers, farmers, and food businesses.



GYST Traditional Pickles are naturally fermented using the freshest possible organic produce. We add only kosher salt and water: no heat, no vinegar. The result is a naturally tangy, flavorful and healthy pickle that complements any dish.

We believe preservation is innovation. Fermentation allows food products to be sustainably preserved and gives them a unique and desirable flavor. The process enhances and stimulates healthy microbes and boosts vitamins and nutrients. Currently, we work directly with three local farms: Twin Organics, Lily Springs Farm and The Good Acre Farmers.

Support your local farmers! Fermentation is one of the easiest forms of preservation that ANYONE can do. It’s easy (and in fact cheaper!) to buy produce from your local farmers - some to eat fresh and some to ferment! Please join us for a fermentation workshop to learn more about how you can preserve your produce in a way that is easy, accessible, healthy and most of all, delicious. Restore and regenerate with GYST Kombucha!

GYST Kombucha is different. Brewed with the finest fresh and/or dried herbs, we bring you an herbal tonic kombucha that is balanced and revitalizing. We are always experimenting with our herbal teas to brew kombuchas such as dill, lemon balm, ginger, chamomile, hibiscus and chocolate mint. 

Lily Springs Series

We are currently working in partnership with Lily Springs Farm, a 100-acre woman-led farm utilizing restorative, climate-resilient agriculture practices to regenerate soil and grow nutrient-dense permaculture. Using fruits and herbs from Lily Springs such as Black Currants, Elderflower, Elderberry, Aronia and Raspberry, we are making a kombucha that is truly restorative in every sense - from farm, to flavor, to feeling after the first sip.
