Night Tasting Market for Thanksgiving

Please join us for a special Monday Night Tasting Market where you can sip, taste and browse for your Thanksgiving Day fixings! Upon walking in the door, you'll receive a beverage of your choice - a glass of wine, beer or kombucha. Then feel free to graze upon the cheeses, pickles, salamis, chocolates, jams, and more! The Two Sisters, Ky and Mel Guse, co-owners of GYST, will be around to answer any of your holiday questions regarding how to add fermented vegetables to your dishes or cheese boards, new and fun cheese for the season and best natural wines to match your Thanksgiving Day meal. 

The GYST menu will be available if you'd like to both shop and eat. You'll also receive a 10% discount on purchases. In addition, GYST will be rolling out a new Kombucha Subscription series. Be one of the first to learn more about it and sign-up! Tickets are $15 if you purchase on Eventbrite or $20 at the door.

Kombucha 101 - Learn to Make it at Home

Join us for this fun and interactive workshop to learn all about kombucha! We will discuss the origins of this ancient fermented tea, its health benefits, and methods of production and ingredients. We'll play with different "Mothers" (aka, SCOBY's) that make all the magic happen.  We'll also discuss how to make both alcoholic and non-alcoholic kombucha cocktails for the holidays! Workshop fee includes a GYST board (think adult lunchable - one cheese, one meat, pickle, and chocolate) as well as a kombucha cocktail (alcoholic or non-alcoholic). GYST Kombucha Kits will be available for purchase!

Fermentation 201: The Brine and Flavor Profiles

Been lacto-fermenting your vegetables at home? Have you had both successes and failures? We're with you! Fermentation is simple but there is a bit of a learning curve. If you know the basics and are ready for new fermented vegetable project ideas, as well as ideas to troubleshoot if issues arise, this workshop is for you! We'll quickly re-visit the basics of vegetable fermentation, and dive into both dry brine and wet brine methods, packing techniques and discuss common problems. We'll also discuss how we come up with different flavor profiles. Please bring all of your questions, as well as your creativity to this workshop! 

Participants will design their own ferment choosing from an array of vegetables, herbs and spices done in the wet brine method. (Vegetables, herbs and spices will be from any of our partner farms, given what is available to us in December.)

Workshop fee includes class materials, as well as a drink of your choosing (wine, beer, kombucha) and a GYST board (think adult lunchable - cheese, salami, fermented veggie and chocolate).

Up Close and Fermentational with Sandor Katz

Join us for an intimate evening to discuss all things fermented with none other than the fermentation revivalist himself, Sandor Ellix Katz. A self-taught experimentalist who lives in rural Tennessee, the New York Times calls him “one of the unlikely rock stars of the American food scene.” His books Wild Fermentation (2003, 2016) and the Art of Fermentation (2012), along with the hundreds of fermentation workshops he has taught around the world, have helped to catalyze a broad revival of the fermentation arts. Sandor is the recipient of a James Beard award and many other honors.

With your ticket you'll receive a fermented drink (beer, wine, kombucha) and a GYST Board to enjoy with the evening's discussion.

We're excited to announce that we've teamed up with our friends at Blackbird Cafe for a Fermentation Pop Up!

We've collaborated on a 5 course menu using fermented veggies, sauces, and brines in tandem with the thoughtful, classic cuisine that Blackbird is known for. The menu is vegetarian-friendly with a meat option entree. Natural wine pairings are included with the menu as well!
