Fermentation 101 - Learn All You Need To Know!

Please join us for this special hands-on fermentation workshop at Tonkadale Greenhouse!  We'll discuss all aspects of fermentation - what exactly it is, how to do it at home (and do it well!) and why this form of preservation is the easiest and the safest. Yes, SAFE! We'll also discuss the many health benefits of fermentation. Participants will then dive into making their own sauerkraut to take home and ferment. Workshop fee includes class materials and samples of GYST's own fermented vegetables!

Fermentation 201 - The Brine & Flavor Profiles

Been fermenting vegetables? Have you had both successes and failures? We're with you! Fermentation is simple but there is a bit of a learning curve. If you know the basics and are ready for new fermented vegetable project ideas, as well as ideas to troubleshoot if issues arise, this workshop is for you! We'll quickly re-visit the basics of vegetable fermentation, and dive into both dry brine and wet brine methods, packing techniques and discuss common problems. We'll also discuss how we come up with different flavor profiles. Please bring all of your questions, as well as your creativity to this workshop!

Participants will design their own ferment choosing from an array of vegetables, herbs and spices done in the wet brine method. (Vegetables, herbs and spices will be from any of our partner farms, given what is available to us in October.)

Workshop fee includes class materials, as well as a drink of your choosing (wine, beer, kombucha) and a GYST board (think adult lunchable - cheese, salami, fermented veggie and chocolate).

The next GYST Pizza Pop-Up is coming up! Come on in and enjoy pizza GYST style, featuring a sourdough crust and your favorite fermented toppings. For this month's pizza night we are adding a special kombucha cocktail menu to go along with your favorite pie. As always, we'll have your fun, easy and delicious drinking beer and natural wines selected by owner and somm, Mel Guse. The bad-ass, all women run team at GYST, promises the perfect pizza pie and kombucha cocktail night to start your weekend off right.

Join us at GYST Fermentation Bar for this special hands-on fermentation workshop!  Participants will learn how to ferment vegetables at home by making their own sauerkraut. Up Close and Fermentational with Sandor Katz

Join us for an intimate evening to discuss all things fermented with none other than the fermentation revivalist himself, Sandor Ellix Katz. A self-taught experimentalist who lives in rural Tennessee, the New York Times calls him “one of the unlikely rock stars of the American food scene.” His books Wild Fermentation (2003, 2016) and the Art of Fermentation (2012), along with the hundreds of fermentation workshops he has taught around the world, have helped to catalyze a broad revival of the fermentation arts. Sandor is the recipient of a James Beard award and many other honors.

With your ticket you'll receive a fermented drink (beer, wine, kombucha) and a GYST Board to enjoy with the evening's discussion.

Collaboration Dinner with Blackbird Cafe

We're excited to announce that we've teamed up with our friends at Blackbird Cafe for a Fermentation Pop Up!

We've collaborated on a 5 course menu using fermented veggies, sauces, and brines in tandem with the thoughtful, classic cuisine that Blackbird is known for. The menu is vegetarian-friendly with a meat option entree. Natural wine pairings are included with the menu as well!

Brah. Braaahhhh. Summer's back, and that means GYST Braht Night is here! Join us on Wednesday, July 12th from 5pm - 10pm for the best brahtwursts in town. We use only locally-made, old-world-style brahts from Gerhard's, and top them with our famous krauts and pickles. Throw in some fermented slaw, chips + yogurt ranch, and awesome beer and wine specials, and you've got yourself a party.
